1 c Corn Meal, yellow
1 c Flour
1/2 c Honey
1 tb Baking powder
1/3 c Shortening, Butter flavored
1 ts Salt
3 ea Eggs
1 c Milk
Preheat oven to 400 degrees.
Combine dry ingredients. Cut in shortening til it’s like small
crumbs. Beat eggs, milk and honey and beat (by hand) until smooth.
Pour into well greased and floured 8″ square pan. Bake 20 minutes,
until toothpick comes out clean and top is a golden brown.
This cornbread will hold together well, and it is also a guaranteed
favorite for children too. May be doubled.
