Rice Cooker Blue Velvet Cake

NEW YORK, Nov 11 — If you thought your rice cooker was only good for making rice, you’ll definitely want to try out this Rice Cooker Blue Velvet Cake recipe. Courtesy of the folks at Facebook page Tasty, you’ll need these ingredients to make the blue velvet cake: White cake mix, buttermilk, oil, eggs, cocoa powder and royal blue food colouring. For the cream cheese frosting, you’ll need: Cream cheese, butter, powdered sugar and vanilla. The first thing you’ll need to do is combine the blue velvet cake ingredients in a mixing bowl and mix the batter until smooth. Pour the batter into your rice cooker bowl and let it slow cook for 90 minutes or until cooked. Remove the cake from the rice cooker and let it sit for 15 minutes to cool down. Flip it over and cut in half. Chill in the refrigerator so it’s easier to ice. Next, combine the frosting ingredients in a bowl and mix until smooth. Start with the bottom half of the cake, spread some of the frosting and add a few blueberries. Top with the other half of the cake. Frost the cake however you like. Add some chocolate shavings if you like and enjoy! Baby showers are so fun, aren’t they? Since Jenny is having her third little boy, I knew just what I wanted to bring to her shower. Not any ol’ thing would do. I made Blue Velvet Cake! From scratch! Cake is always a favorite part of any shower and I wanted it to have a surprise inside when you cut it. Unexpected, vibrant, and perfect for a little boy. Blue Velvet Cake. Blue Velvet Cake has all of the great taste of the more traditional Red Velvet Cake, but with such a fun twist that everyone will remember it. INGREDIENTS ½ cup Crisco 1 ½ cups sugar 2 eggs 1 ounce royal blue gel paste food color 2 drops violet gel paste food color 2 tablespoons cocoa 2 ¼ cups all-purpose flour 1 scant teaspoon salt 1 teaspoon vanilla 1 teaspoon soda 1 cup buttermilk 1 tablespoon vinegar INSTRUCTIONS Preheat oven to 350 degrees F. Grease and flour 3 8-inch round cake pans. Cream together Crisco, sugar and eggs. Make a paste of food coloring and cocoa and add to mixture. Add salt and flour with buttermilk and vanilla. Alternately add soda and vinegar; just blend, don’t beat hard. Bake 25 minutes. Cool cake thoroughly before frosting.
