2 c Flour, whole wheat 2 x Egg, beaten
1 c Sugar 1/2 ts Nutmeg
1/4 c Wheat germ, toasted 1 ts Vanilla
1 c Brown sugar 4 c Apple, diced
1 ts Cinnamon 1/2 c Oil
1 c Walnut, chopped 2 ts Baking soda
1 ts Salt
Sift together whole wheat flour, wheat germ, baking soda, cinnamon, salt
and nutmeg. Set aside. In large bowl combine peeled and diced apples,
sugars, oil, walnuts, eggs and vanilla. Add flour to mixture. Stir gently.
Blend well. Turn into 2 or till cake pulls from side of pan. Cool in pan
or rack. If desired, sprinkle with confectioner’s sugar. Cut in 12 bars.
