2 sl Bread
2 Cloves garlic
1 Pinches salt
1 tb Chopped parsley and snipped
; chives
4 tb Olive oil
1 Red pepper; deseeded and
-diced
1/2 Red onion; chopped
1/2 cn Chopped tomatoes
2 Eggs
Salt and pepper
Preheat the oven to 200c/400f.
1 Cut the bread slices in half into triangles. Crush the garlic with
the salt. Place in a large dish with 2 tbsp olive oil, parsley and
chives.
2 Dip the bread in the mixture, and bake in the oven until golden.
Heat the remaining olive oil in a saute pan, and add the pepper and
onion. When soft, add the tomatoes. Season and cook for 5-10 minutes.
3 Divide the mixture between two small gratin dishes, crack an e g
onto each and bake in the oven for five minutes. Serve with the bread.
