75 g Dairy free margarine; (3oz)
50 g Caster sugar; (2oz)
1 Lemon; juice of
8 Dessert apples; peeled and
-sliced
; into wedges
2 Dairy free teacakes; toasted
-and halved
1 ts Cinnamon
2 tb Icing sugar
Mint sprigs to decorate;

1 pk Apple crackles to decorate;

Melt the margarine in a large frying pan. Toss the apple wedges in the
lemon juice.
Add the sugar and apples to the pan and cook over a medium heat for 20
minutes until caramelised.
Meanwhile, toast the teacakes. Divide the apple mix between each half
of the teacakes.
Mix the cinnamon with the icing sugar and sprinkle over each topped
cake.
Decorate with apple crackles and a sprig of mint.
