1 c Self-rising flour
1/2 ts Baking soda
2 tb Cocoa powder
3/4 c Brown sugar
3 Apples
2 Eggs, beaten
1/3 c Pecans, chopped
1/2 c Vegetable oil
Powdered sugar
Preheat the oven to 350?F. Grease an 8 inch springform pan. Line
the base with a circle of wax paper. Sift the flour, baking soda and
cocoa together. Stir in the sugar and make a well in the center. Set
aside 1 apple; peel and grate the others. Place the apples, eggs,
pecans and oil in the well of the flour and stir together gradually.
Spoon into the pan and smooth the top. Bake about 40 minutes, or
until a skewer inserted into the center comes out clean. Cool for 5
minutes, then loosen the clip on the pan to remove the cake. Cool
completely, then dust with powdered sugar. Slice the apple and
arrange it on top just before serving. Serves 8
