Cowboy Cornbread

Ingrients & Directions


2 c Cornbread mix
2 c Shredded sharp Cheddar
-cheese
2 Eggs; beaten
1 c Sour cream
2 Jalapeo peppers; minced
3 tb Diced pimentos
Cooking oil

Preheat oven to 350 degrees. Oil a large cast-iron skillet and place
skillet in the oven to heat the oil. Combine cornbread mix, sour
cream and egg. Blend well. Add cheddar cheese, pimentos and jalapeo
peppers. Mix all ingredients, bearing in mind that batter will become
very thick. Remove hot skillet from oven and pour batter into
skillet. Bake for 20 to 25 minutes or until top of cornbread is
golden brown.
