You need a basic pie crust, and a 9 inch pan. Set aside
Cut up 6 cooking (green, or tart) apples, and boil them for 5 minutes or
until slightly soft. set aside.
Melt 1/2 cup of butter, and pour into the pie crust. Add 1/2 cup of brown
sugar, followed by 1/2 cup of finely ground pecans (although walnuts or
filberts will do). Place the apples on top of this, and evenly spread a
mix of :
1/4 cup brown sugar, 1/2 cup white sugar, 1 tbsp cinammon, 1/2 tsp ginger,
nutmeg to taste (1/2 of a nutmeg or more in my experience). make sure it
covers all the apples evenly, so you may wish to add the apples and the
coating in alternate layers.
Top off with several pats of butter on the surface of the pie, and lay the
crust down over the top. Cut vents in the crust.
Bake for 10 minutes at 450, then drop the temp to 350, and bake for another
20 minutes. It should come out with a carmelized nut bottom, and fragrant,
soft-apple filling.
