Filled Chocolate Cupcakes

Ingrients & Directions


FILLING
8 oz Cream cheese; softened
1/3 c Sugar
1 Egg
1/8 ts Salt
1 c Coconut
1/2 c Choc Chips

-BATTER-
3 c Flour
2 c Sugar
2/3 c Cocoa
2 ts Baking soda
1 ts Salt
2 c Water
2/3 c Oil
2 tb White vinegar
2 ts Vanilla
Additional Coconut

To prepare filling,in small bowl,beat cream cheese,sugar,egg and salt until
smooth and creamy.Stir in coconut and choc chips.set aside.Preheat oven to
350.To prepare batter,in large bowl,stir together flour,sugar,cocoa,baking
soda and salt.Add water ,oil,vinegar and vanilla.Beat on medium for 2
min.Fill paper lined or foil lined muffin tins 2/3 full with choc
batter.Spoon 1 tbsp filling into the center of each cupcake.bake 20-25
minutes.
