1 c Butter or margarine 1/2 ts Peppermint flavoring
2 c Powdered sugar 2 ts Vanilla
4 ea Chocolate squares; melted & 1 1/2 c Vanilla wafer crumbs
-cooled Maraschino cherries
4 ea Eggs Whipped cream
Beat the butter and powdered sugar a long time. Add melted chocolate
squares. Beat and beat. Add eggs and beat some more. Add peppermint
flavoring and vanilla. Beat until the mixture is very smooth and
creamy.
Put 1/2 inch crushed vanilla wafer crumbs in the bottom of 18 medium
sized cup cake papers. Fill with the cream mix. Add maraschino
cherry on top and the rest of the crumbs.
Freeze. Top with whipped cream before serving.
