3/4 c Sugar
2 tb Flour
3 tb Cornstarch
1/4 ts Salt
2 c Milk
2 Well beaten egg yolks
1 tb Butter
1 ts Lemon juice
2 c Sliced fresh peaches
1 9-inch baked pie shell
Sweetened whipped cream
Mix sugar, flour, cornstarch and salt. Add milk slowly and cook over
boiling water until mixture begins to thicken. Add well-beaten egg yolks
and butter and cook until mixture thickens. Add lemon juice and cool.
Arrange 1 cup sliced peaches in pie shell. Pour in filling and top with
remaining peaches. Chill thoroughly and top with sweetened whipped cream.
