Pastry for 9′ pie with lid
3 c Tomatoes; green
3/4 c Brown sugar
1/2 c Molasses
1/4 c Water
2 tb Flour
1 ts Cinnamon
1/4 ts Nutmeg
Preheat oven to 425F. Remove stem end of tomatoes- don’t peel them.
slice tomatoes in thin rings, cover them with boiling water and let
stand for about 10 minutes, then drain them. Arrange the tomato
slices in the unbaked pastry shell. combine sugar, flour, spices,
molasses and water; pour the mixture over the tomatoes and cover with
the top crust. Bake at 425F for 15 minutes, then at 350F for 30
minutes.
