1/2 c Honey
1/3 c Margarine
1 ts Vanilla
2 Egg
3/4 c Whole wheat flour
1/2 c Unbleached flour
1/2 c Rolled oats
1 ts Baking powder
1 ts Nutmeg
1/2 ts Salt
1 c Banana; mashed, ripe
1/2 c Walnuts; chopped
Cream honey and margarine in large mixing bowl until fluffy. Beat in
vanilla. Add eggs one at a time, beating well after each addition. Combine
dry ingredients. Add alternately with bananas, blending well. Stir in
walnuts. Spoon into greased 9x5x3-inch loaf pan. Bake at 325 degrees F 50
to 55 minutes or until wooden pick inserted near center of loaf comes out
clean. Cool completely before slicing.
