1/3 c Applesauce
2 Egg equivalents; beaten
1/2 c Milk
2 c Flour
1 c Quick-cooking rolled oats
1 ts Baking soda
1 ts Baking powder
1/2 ts Salt
1/2 ts Cinnamon
1 c Fresh cranberies

I am a first-year medical student at Michigan State Univeristy who has been
enjoying this list for some time — and who has only recently found enough
time to contribute something back to the fray! I found this recipe at a
local grocery store and thought it was great.

Combine honey, applesauce, eggs and milk; mix well. Combine flour, oats,
baking soda, baking powder, salt and cinnamon; mix well. Stir into honey
mixture. Fold in cranberries. Spoon into three 5-1/2 x 3 x 2-1/4-inch
prepared loaf pans. Bake at 350 degrees F 40-45 minutes or until toothpick
inserted near center comes out clean.
