Lemon Cake (lbj Ranch)

Ingrients & Directions


1 1/4 cn Sugar
3/4 c Butter
8 Egg yolks
1 1/2 c Cake flour; sifted
3 ts Baking powder
3/4 c Milk
1 ts Vanilla
1 ts Lemon juice
1 ts Grated lemon rind
1/4 ts Salt
2 c Confectioner’s sugar
1/4 c Soft butter
1 ts Cream; (or more)
1 Lemon rind; grated
1 Lemon, juice of

Sift sugar. Beat butter until soft. Add the sugar gradually. Blend these
ingredients until they are very light and creamy. In a separate bowl beat
egg yolks until very light and lemon colored, then blend them into the

butter mixture. Resift cake flour, baking powder and salt three times and
add these ingredients to the butter mixture in three parts alternately with
thirds of the 3/4 cup of milk. Beat the batter thoroughly after each

addition. Add and beat for 2 minutes vanilla, lemon juice and lemon rind.
Bake in greased 9 inch layer pans in a moderate oven (375 degrees) for abou
t

20 minutes. Spread with Lemon Icing.

LEMON ICING:

Blend the sugar, butter and cream. Beat in the grated rind and the lemon
juice.

NOTES : Well, this one led us a merry chase. A version was posted on the
net, found by a list member to be incomplete. I started looking for the
complete recipe as did the original poster. I found this one by calling
Cyn who called Mrs. Johnson. The copy I have came in Lady Bird’s envelop

and is on the LBJ ranch note paper. Guess it’s the real McCoy.
