1 lb Mushrooms; sliced
6 sl Bacon; diced
1/2 md Onion; sliced
2 Cloves garlic; minced
2 tb Chopped parsley
3 tb Olive oil
4 Eggs; beaten
1 c Parmesan cheese
1/2 ts Salt
1/4 ts Pepper
1 (9 inch) pie shell; unbaked
Saut? mushrooms, bacon, onion, garlic and parsley in olive oil until
tender. Drain well and cool. Combine eggs, cheese and seasonings. Stir into
onion-bacon mixture. Pour into pie shell and bake for 30 minutes at 350?.
Yield: 6 to 8 servings.
