1/3 c Mashed tofu 3 tb Nutritional yeast powder
1/3 c Vegetable oil 2 ts Baking powder
1 c Water 2 tb Sugar
1 c Yellow corn meal 1 ts Salt
1 c All-purpose flour 1/2 ts Black pepper (or more!)
Using electric mixer or food processor, beat tofu with oil and water
until smooth.
Mix cornmeal, flour, nutritional yeast, sugar, baking powder, salt and
pepper in a bowl, then add to tofu mixture. Mix well to combine. Pour
batter into a greased 8″ (round or square) casserole dish or baking
pan. Bake at 350 F. for about half an hour. Cut into wedges or
squares and serve hot.
