Ingrients & Directions


5 c Cooked white beans
1/2 c All-purpose flour
4 Eggs; separated
1/2 c Sugar
1/2 c Honey
5 Marron glaces (candied
-chestnuts); roughly chopped
1/4 c Thinly-sliced dried apricots
2 tb Baking powder

Preheat oven to 350 degrees. Butter a 9-inch spring form pan. In a food
processor, blend beans until smooth. Pour into a mixing bowl and add flour
and egg yolks and mix well. Add sugar, honey, chestnuts, dried apricots and
baking powder and stir to mix well. Whip egg whites to soft peaks and fold
the bean mixture into the whites. Pour mixture into buttered pan and bake
in oven for 50 minutes to an hour, or until a toothpick comes out clean.
Cool to room temperature and serve. This recipe yields 8 servings.
