1 1/2 c Sugar 1 ts Ground cinnamon
1 c Cooked pumpkin — or canned 3/4 ts Salt
1/2 c Vegetable oil 1/2 ts Baking powder
1/2 c Water 1/2 ts Ground nutmeg
2 ea Eggs 1/4 ts Ground cloves
1 2/3 c All-purpose flour 1/2 c Walnuts — chopped
1 ts Baking soda 1/2 c Raisins — optional
In a mixing bowl, combine sugar, pumpkin, oil, water and eggs; beat
well. Combine dry ingredients; gradually add to pumpkin mixture and
mix well. Stir in nuts and raisins if desired. Pour into a greased
9-in. x 5-in. x 3-in. loaf pan. Bake at 350 deg. for 65-70 minutes or
until bread tests done. Cool 10 minutes in pan before removing to a
wire rack. Yield: 1 loaf.
