1/2 lb Ground beef 1/4 t Pepper
1/2 lb Ground lean pork Cornmeal Pastry
1 lg Onion, sliced 1 c All-purpose flour
2 1/2 c Tomato juice 1/4 c Cornmeal
1 1/2 c Frozen corn 1/2 t Salt
2 T Chili powder 1/3 c Shortening plus 1 T
1 t Salt 3 T Cold water
In a large skillet cook and stir the meat and onion until meat is
brown and onion is tender. Drain off fat. Stir in remaining
ingredients. Heat to boiling; reduce heat and simmer 10 minutes. Heat
oven to 400 degrees. Prepare pastry. CORNMEAL PASTRY: Measure flour,
cornmeal and salt into bowl. Cut in shortening thoroughly. Sprinkle
in water, 1 tablespoon at a time, mixing until flour is moistened.
Gather into a ball; roll into rectangle 12 by 8 on lightly floured,
cloth-covered board. Fold length-wise in half; cut slits on folded
edge. Pour meat mixture into ungreased baking dish, 11-1/2 by 7-1/2
by 1-1/2 inches. Cover with pastry; seal to edges of baking dish.
Bake 30 to 35 minutes.
