3 1/4 c Sifted all-purpose flour
1 ts Baking soda
1 ts Salt
1/3 c Butter or margarine;
-softened
1/3 c Sugar
1 Egg
2/3 c Honey
1 ts Vanilla extract
Colored sugar or sprinkles
-(optional)
Sift together flour, baking soda and salt. Work butter in a bowl until
creamy; gradually add sugar and beat until fluffy. Add egg, honey and
vanilla; beat thoroughly. Gradually add sifted dry ingredients to butter
mixture and beat until smooth. Cover and chill. Heat oven to 375 degrees.
Grease cookie sheets lightly with unsalted shortening. Divide dough into
small portions and roll out one portion at a time, leaving remainder in
refrigerator. Place on portion on a floured board and roll dough to a
thickness of about 1/4 inch. Cut with a 2-inch cookie cutter. Place cookies
2 inches apart on prepared cookie sheets. Decorate with colored sugar or
sprinkles, if desired. Bake 8-10 minutes, or until edges are lightly
browned. Remove from sheets and cool on wire cake racks. Makes 5-6 dozen
cookies.
