3 Egg;beaten; 1 1/2 ts Salt
3 c Potato;shredded 1 cn Cranberry Sauce
1 1/2 c Turkey;chopped, cooked 1/2 ts Sage;dried
1 1/2 c Onion;grated ds Pepper
1 tb Flour;white
Combine eggs, potato, turkey, and onion. Add flour, salt, and
pepper; mix well.
Drop about 1/4 cup batter for each pancake onto hot, greased
griddle, spreading to about 4′ in diameter. Cook over medium-low
heat 3 – 4 minutes on each side.
Serve with cranberry sauce if desired.
